Classic Osetra
Osetra (also known as Oscietra, Ossetra, or Asetra) is the roe of the Russian sturgeon (Acipenser gueldenstaedtii) or the Persian Osetra Sturgeon ( Acipenser Persicus). This species is originally native to the Caspian Sea. Osetra is the connoisseurs choice of caviar, it's firm pearl is mid-sized and the grains are dark colored with an olive green or golden brown color.

Osetra Caviar comes from an average size of sturgeon species, this medium-sized sturgeon normally weighs between 20 to 60 kg (44 to 132 lbs) but can weigh up to 100 kg (221 lbs) and can grow up to about 200 cm (79 in). The sturgeon reaches maturity at around age of 11, but can live up to eighty years. It can be considered semi-wild, because it is raised in large lakes and not in small spaces. Osetra has been the favoured delicacy of the Imperial families of Russia and Iran throughout the centuries.
